Special Ramadan Kachori Recipe – Crispy Iftar Recipe

Ingredients
  

For the Dough
  • 2 cups all-purpose flour maida
  • 2 tablespoons oil or ghee
  • ½ teaspoon salt
  • Water as needed
For the Filling
  • 1 cup boiled and mashed potatoes
  • ½ cup boiled chickpeas optional
  • 1 small onion finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chaat masala
  • ½ teaspoon Salt to taste
  • 2 tablespoons fresh coriander chopped
  • 1 green chili finely chopped
For Frying
  • Oil for deep frying

Method
 

Step 1: Prepare the Dough
  1. Take a mixing bowl and add all-purpose flour and salt.
  2. Add oil or ghee and mix it well with the flour.
  3. Gradually add water and knead until you get a soft dough.
  4. Cover the dough with a cloth.
  5. Let it rest for 15–20 minutes.
Step 2: Prepare the Filling
  1. Heat a small pan with 1 tablespoon oil.
  2. Add cumin seeds and let them crackle.
  3. Add chopped onion and sauté until soft.
  4. Add mashed potatoes and boiled chickpeas.
  5. Mix in red chili powder, turmeric powder, garam masala, chaat masala, and salt.
  6. Cook the mixture for 2–3 minutes while stirring.
  7. Add green chili and fresh coriander.
  8. Turn off the heat and allow the filling to cool completely.
Step 3: Shape the Kachori
  1. Divide the dough into small equal balls.
  2. Flatten each ball using your fingers or a rolling pin.
  3. Place 1 tablespoon of filling in the center.
  4. Bring the edges together and seal the dough properly.
  5. Gently flatten the stuffed ball to form a round kachori.
Step 4: Fry the Kachori
  1. Heat oil in a deep frying pan over medium heat.
  2. Carefully place the kachoris in the hot oil.
  3. Fry them on medium heat to ensure even cooking.
  4. Turn occasionally until they become golden brown and crispy.
  5. Remove the kachoris and place them on paper towels to remove excess oil.

Notes

Follow these tips to get perfect kachori every time:
  • Do not make the dough too soft.
  • Fry on medium heat to keep the kachori crispy.
  • Make sure the filling is not too moist.
  • Seal the dough properly to prevent filling from leaking.
